Shake the saucepan over low heat for 30 seconds or until excess moisture evaporates. Remove from heat. Using a potato masher, more or less mash potatoes. Gradually add butter and mash till easy. Add cream and beat with a wooden spoon until smooth—season with salt and pepper. Stir in Parmesan cheese. Keep warm.

For the gremolata, integrate all ingredients in a bowl, season, and set aside till equipped to serve.
